The platform should follow how you want to work, not the other way round. This is the first thing we settle.
Bulgarian couriers are not native to Shopify. Delivery runs through middleware, which is the cleanest route on this platform and works well once it is set up properly.
I start from a well-built free theme and customise on top of it, rather than writing an entirely bespoke one. The skeleton stays understandable, so any developer can pick it up later.
Shopify is a monthly subscription, Bulgarian checkout needs middleware, and some things simply cannot be done on the platform. Better to know all three before starting than after.
Shopify if you want to run the store yourself and it sells simply. WooCommerce if you need anything unusual. I will tell you which, including when the answer costs me the project.
